Need some advice on venison sausage

I have used the "fat" from a butt I turned into bacon and smoked. I used this in a trial run of just 1 venison salami. It was a 50 % veni 40 beef and 10 bacon fat mix came out pretty good.
 
I've used Trehalose in my elk and venison sausage, before realizing there was no game taste. I did use it in another guy's venison just because it had a gamey smell and I just knew it would be tasting the same way. Seemed to work out pretty good.
