Started my first smoke on my Char-Griller. Everything seems to be going ok. Temps around 230-240. I have started with about 5lbs of lump charcoal. Was wondering how much coals it will take for 6 or more hours. I'm about a hour into the smoke and seem to be burning up the coals pretty fast. I am doing a rack of spare ribs and 2 fattys. Also how long should I be using wood chips for smoke. Thanks for any help I can get.

Do all the Chars use chips only? or can ya toss small splits in there? Splits add BTU's and lessen lump requirements.

Might not need to go six hours...full spares? 321 method? That's 6 hours and the fatties'll be done in about 3...

Add some chips after noticing no smoke for a while. If ya can smell it... yer smokin'.

Good temps, etc. Watch for pull back on bones. You might be more like a 2-2-1.

You CAN finish in the oven as well, for the last "firm-up" period.

Char unit runners?

On the smaller offset smokers I have found that wood chunks work better than chips. I make my own by splitting wood small then chopping it in my mitre saw. Also get a chimney starter "preferably the Weber" and start using lump charcoal. That way you are always using wood. The only time I use regular charcoal is when I have the meat wrapped in foil. Smoke shouldn't flavor meat that is foiled so why waste wood.

I would add lump twice on a 6 hour cook on my CharGriller. I throw the unlit right on top of the fire, along with 1 or 2 chunks of wood. Don't know how many pounds that would be.

Hope this helps.

Take care, have fun, and do good!
