Well after my modifications for my Brinkman SnP.I put it to test again today cooking a 14# Turkey.I brined it with the Slaugterhouse Recipe for 24hrs.and rubbed it with my seasoning's Obie-Cues Grilling Spice,Spicy Garlic powder,Pepper, and in my water pan I used some 1/2 gallon of orange juice. For my misting spray I used apple juice with CranRasberry juice when It was time for a mopping spray. So here are my pic's It took e 6 hours I am so glad I used my Maverick Redi Check Smoker ET-733 Dual Probe because it is a life saver without a digital thermometer.

Kahluah Pecan Pie in this shot before the turkey was smoked.

Just installed the mod to the smoke stack.

That looks really good!  I owned a SNP just like yours and made very similar mods as you did.  However, I was still burning TONS of coal.  I sold it for $50 and I am putting the money towards an Oklahoma Joe or a Trager...haven't decided yet. The SNP was a darn good beginner smoker though.

Thank's again I forgot to mention I used Big Green Charcoal with Cherry & Pecan Wood.It sure was a chore to keep the heat up in the smoker but eventually was able to keep a constant temp.I still had a great time.My next mod and last is for the Charcoal/Wood Firebox.
