My first smoke....guidance please

Hi all
So I finally got enough courage to do my first smoke. Here are the stats

It's 29* in north jersey today.
I have a 22.5 wsm bullet smoker
My first smoke is 1 slab of baby back ribs and 10 chicken thighs.
Water is in the pan
1 bag of charcoal
Apple wood chips (lowes doesn't sell chunks. Def going someplace else next time)
Temp of the smoker is about 205*
All vents are open

Should I add more charcoal?

If Charcoal is all you have , then by all means use it . You will put in only a few as your temp. is good from MHO.

Sorry to be late on the reply...however send Q-view - if you took pics.

Here's a suggestion/idea , Start a "BBQ Log" ... include ,Heat (grill level and IMT) , fuel , time , weather . Anything you want to keep track of ; this is a 'self-help' guide for outdoor cooking. Helps in the learning curve , the more you cook , the more you record and track , leading to a better outcome each time .
