I'm a long time fan of eating smoked yummy ANYTHING. Short timer at the smoking game. I have all the respect in the world for traditional methods but I'm a pellet grill guy. I recently built a small oven sized tabletop addition to my Traeger. Made from cedar, it sports removable 5 racks that came from old household ovens. I just finished it's first smoke and was able to put 23 lbs of sliced beef in her for some jerky. My design worked like a charm. Yummmmmm!
