just wanted to share my set-up how i have been smoking meat for a few years now. keeps perfect heat temps no fuss with charcoal and trying to keep the temps right.
this is my gas turkey fryer burner which fits perfect under the smoker
here you can see the charcoal pan for the smoker sitting above the turkey fryer burner. this pan instead of charcoal is where i put the wood chunks
this little dial is wonderful. i can regulate the flame heat temp smoke with one small turn.
