I have 4 racks of ribs rubbed down memphis style, used some molasses as a binder I think it is called. Worked out nice. Going to do the 2-2-1 method. Based on something I came across on google, I think I am going to douse them in apple juice / cider when I foil wrap. I have not found the ribs to dry when smoking, but hey, is experimentation not a great idea? I'll accept any feedback positive or negative on this.
I decided I would smoke some beans for a first time, found dutch's wicked beans, I think I will give them a try,
Planning on using a mix of Pecan and Applewood. Any reccomendatons on ratio? 50/50? 75/25?
Likely going to do a basic cornbread as per the package but I may take an idea from here, I saw a few good ones, including cooking it in an iron skillet. Never would have though if that...
And if I feel ambitious maybe I'll make a creamy slaw. If not, I'll get one from the grocery store as now I have to go there for bacon and onion and peppers for the beans :)
Got the Mother In Law coming over for dinner with the father in law (my parents are both gone) the MIL lost her mother a few months ago, so I suggested they come they for dinner, my wife and my almost 3yr old who absolutely loves bbq and ribs.
