I have been making venison summer sausage and using apple pellets in the amaz-n tray to add smoke to my sausage. I know that mesquite has a stronger smoke flavor and was wondering how it would taste using it to smoke the summer sausage. I am using an Masterbuilt Electric Smoker and the amaz-n smoker tray to apply the smoke now. I know that you can add to much smoke and make the sausage bitter. I need advice on at what temperature to add the smoke from the pellets and for how long to smoke the sausage to not over smoke it. Or would you suggest another type wood to smoke the sausage.
