Chicken is so easy & quick.. And not to mention super good! A friend requested the chicken for a 'little' lunch we were going to have today and we also had smoked stuffed peppers, smoked mac & cheese, homemade guacamole and oven roasted Parmesan zucchini. Yum!

Chicken going on the smoker, flipped after a few hours, and then ready to eat!

Now on to the appetizers - guacamole! I could eat buckets of this stuff. Also, jalapeño poppers with 1/2 stuffed w/cream cheese & sharp cheddar and the other half had the same mixture but I added pulled pork as well. When they were done smoking I broiled them in the oven a few minutes to really crisp them up. Yummy!!

And the sides - baked Parmesan crusted zucchini and smoked mac & cheese. So good!!


Great day to remember the fallen and enjoy great meals with friends and family.

Thanks guys! I took it over to my mom's where there was even more food and it was all gobbled up by the fam. It was a good time. :biggrin:
