Built a meatloaf. 2 lbs 80-20 and a 1/2 lbs of Italian sausage. Lipton beefy onion and 2 eggs. 3/4 cup bread crumbs.

Looks great!  Here is the one I did yesterday.  Stuffed meatloaf, stuffed with thinly sliced vidalia onion, thinly sliced bell pepper, black forest ham slices and nuestro queso cheese then topped with some sliced bacon.  I smoked in my UDS for about 3 hours at just under 300 degrees using lump charcoal, oak and hickory.  Basically what ever is left in the basket from the previous smoke.  I always cook ground meat product at a higher temperature than I do my low and slow pork butts etc...

Today for lunch I sliced a couple of pieces fairly thin (was easy after being refrigerated), nuked in the micro wave for a minute and put on sliced Italian bread with a mixture of ketchup, brown sugar, cider vinegar and a little dry mustard.  Legendary!
