So here is a pic of the inlets...and below is answer I received from Yoder.

Yes! You can purchase them they us. They are $29.95/ea. and require a 39/64 hole. Since that size is pretty specific (and, perhaps, a bit hard to find for a drill bit), you could try a 5/8" hole which would be 1/64 too large, but, would most likely work.
 
After doing some research I believe these are metal cable glands...and do not think they should cost 30 bucks.  Going to try and find one at a store. or at least on line.  It may require some more research to get the correct one.
 
These are fairly ordinary cable glands, the only thing special is you will want to make sure and get something made from high temperature parts, so it doesn't melt or emit toxic fumes into the grill.  They will probably cost more than normal waterproof glands. You will want them to be stainless if you can get it, and have a high-temp silicone insert.

The one Ironhorse found looks like it would work, but it may not be good for high temps.  Really, if you are using low temperatures for your smokes, it would probably be ok...  But I would be sure and test the insert for it's ability to handle the temperatures, or replace the insert with something else.

You aren't really needing anything totally waterproof, you just want to not create a large air-leak, so you could use almost anything, or even leave the insert out.  The way the cable glands work, it is real easy to replace the insert with any sort of valve packing.  The valve packing used for boiler hose bibs would work, I think it is a medium temperature silicone.  You would just wrap some around the probe wire, and close it with the gland cap...  And that would be pretty air tight.
