You can't test the accuracy of your probes by laying them on the grate. Bring a pot to boil, and put the tips (inch or two) of the probes in the boiling water. Then see what they each read. Don't touch the sides or bottom of the pot with the probes, and don't get the junction between the probe & the wire wet. Bear
