So for the first time I am going to be done smoking before my guests arrive for tonights celebrations. So instead of being able to serve the food straight from the grill I am going to have to keep it for a bit maybe 2 hrs before the guests arrive. What is the best way to keep it all warm without overcooking and drying it all out. I have some pulled pork, chicken quarters, and a salmon fillet. Any suggestions will be appreciated. I also did some potato salad and coleslaw from the recipes in the sides thread. I will post the exacts with pics when its all done.

Wrap em in foil..... wrap em in a towel.... put em in the cooler... if there's any room left in the cooler stuff a few old towels in between. I know that will work for the pork and the chicken. I'm sure it will for the salmon too. It's amazing how long this stuff will stay hot like this.

What Pig said, but I wouldn't on the salmon. Fish has to be served right off the cooker or it will dry. It only will take 20 min max to cook anyway so what's the big deal. Cook it while your guests are there to watch you perform your culinary magic and wow them with the taste!
