Nice cook . Sandwich looks great . Hard to beat the flavor of cooked with all wood . I've been drying peppers last couple days for powder . The maters are great ground up to mix with it .

Thanks Travis, it's pretty tough to beat a day smokin' in the backyard and knocking a few back, if only the pool was heated! That chicken sausage is a huge fan favorite, I usually pork for me and the chicken for my wife, then take a bite of hers and wonder why I don't eat the stuff more often, it's a delicious change. Thank you Warren! I start smoking the butt at the lower temp to get good smoke penetration for flavor, and I guess that helps seal it also. Thanks for the Like Warren, much appreciated! RAY

That's one fine looking chunk of pork meat right there Ray. I know it was an all day ordeal but worth it in the end. Great job buddy!! I'd started running my temps higher...in the 275 range for butts and briskets before I read Chile's post and after that I'm running 325 to 350. That's about maxed out for my smoker but it still turns out some great Q and does it a lot faster.

Thank you so much Robert! I'm an absolute convert now, hot and fast saves a ton of time and flavor in the end product isn't compromised one little bit. I don't know if I'll ever smoke another brisket with all that going on, I don't have use of the leftovers like I get from a porkbutt. Thanks you for the Like amigo, I truly do appreciate it! RAY
