UMMMM... that's a little to cold... you want the cheese to be a little soft.. not frozen... but then you already knew that

I mean yeah but... it won't melt! I might also have a kerosene heater in the garage. Was 70 degrees grilling steaks as it was snowing outside.
 
Its a pitmaster blend that I have been using with cheeses the last 2 years. Trying to be consistent with the flavor
 
Brian you need to try the Cabot Hot Habanero. It's really good off the shelf, but it's 10 fold better smoked.
