Still have some of the Tillamook I smoked last year as well.
 
UMMMM... that's a little to cold... you want the cheese to be a little soft.. not frozen... but then you already knew that
I mean yeah but... it won't melt! I might also have a kerosene heater in the garage. Was 70 degrees grilling steaks as it was snowing outside.
 
All done and resting in the fridge for 10 or so days. Then cut and package. More to come.
