Here is the grand finally of my Friday night beef smoke
I could have let it go just a bit longer I think.
I pulled it at just under 180* as it was getting late. I would have like to let it go to about 195* but over all it was very good. The wife said it had the best flavor of any beef I have smoked. and I agreed.
I will for sure be injecting Yoshidas again
