Something I ran across in the Kansas City Craig's List that I thought would make a good insulated box for a smoker... They are Stainless Steel and Insulated so the hard part of the build would already be done and they are pretty good size looks like...

Depends on what they are insulated i would think. Being ice chests id be willing to bet they are insulated with some type of styrofoam/foam which would probably melt and possibly cause the seams to come apart if it releases any gas when melting.

This is of course just my hypothesis as i have no real experience with this.

I think you may have a good find there. Is it a ice chest or chest freezer? No box inside for a compressor? I would say that it has foam insulation sheets in it, but you never know. I would get it. You really have the hardest part done on that if you do, the inner and outer shells. A stainless interior, that would be nice. I would separate the inner shell from the outer, see what it has for insulation, and then maybe do like BBQ Engineer did, use the kiln insulation on it, Kaowool. Kept horizontal like that, you have one heck of nice smoker for sausage or anything for that matter with easy access.

I would keep that thing and use it for beer, then get a 55 gallon drum and make a UDS, you could then have somewhere to store a lot of beer while using your UDS. Either way it is a good buy.
