We were low on calls today so I had to come home early, I been trying to find a way to make some tough Mexican beef tender. Vac 3 that were about 1lbs and 1" thick, set the wifi IB SV at 138, turned on the tap for hot water and ran it till it hit 130, put the steaks in and the machine in and filled, 10-12 minutes or so we were cruising along at 138. I looked over at my IB 6x and decided to test both, put it on the opposite side and both ran 138 for about 4 hours with a flat line on the chart. equipment worked great but still searching for the illusive fork tender I keep reading about lol. It turned out ok a little dry imo so next time I will rest 30 minutes before I sear it. The search continues but without my wife, she stated it tasted more like a beef roast to her, maybe maybe not, I am very happy with the SV unit and the therm and would buy them again.
