After seasoning the new grill yesterday, I decided to break it in with a simple while chicken. I’ll need to hit up the spice shop and work on some rubs, so I picked up a simple all-purpose rub for this time around.

I got a nice whole chicken, spatchcocked and seasoned it by rubbing the seasoning under the skin after mixing it with some melted butter and also added some on top of the skin. Got the grill heating up and plan on smoking it to 140 at 250, then hitting it up to 350 until it’s time to pull it.

Turned out great. I had a big water pan in there to see if it would help to moderate the temperature swings that seem to be common with this grill, and it stayed within 15 degrees of the set temp for the most part. It ended up running a bit late so I cranked the temp at 130 rather than 140, but I think it turned out pretty tasty. Crisp skin and moist meat!
