Stumbled onto this forum yesterday while hunting for some recipe ideas...and what was intended to take 15 minutes or so turned into a day of reading....I'd like to personally thank ya'll for wasting my saturday!
Anyway - On Friday, from the comfort of my kitchen, I ordered a new Masterbuilt 30" electric smoker from Cabelas (If I've read correctly over the last day this is referred to as a MES30?). So I'm getting ready to dive back into this smoking hobby.
I say "back in" to the smoking thing because I tried a few years ago and failed terribly. Looking back I think my failure was due in part (80%) to bad technique or lack of understanding on my end, as well as what I finally determined as a faulty burner in my now trashed propane-fueled smoker (an el-cheapo from Walmart i think it was). Then this summer, while camping at a race track for a weekend, a buddy brought along his electric smoker and made some ribs. I learned A LOT from him that weekend, and we borrowed that smoker again for a race weekend later in the the summer where again we had great success smoking some delicious ribs (though I have to admit i was again an observer and not the cook). anyway, that motivated me to get back into this, and the black friday deals got me off the fence.
I plan on making a lot of stuff around the house for the fam, but the racing/camping weekends will be my showcase moments in the future. Ive already started rewriting a menu that was pretty darned solid in years past, the thought that we can step it up a few notches is very exciting.
After reading yesterday, if I'm understanding correctly, this thing referred to as the AMNPS is apparently the thing I need to get? Do you guys set that right on the burner for the MES30 (not sure if it's even possible since I dont have mine to look at yet) or do you do the light it and let it smolder thing even the electric unit? I may start out with the built in tray on my new smoker, but the timing of this may make the AMNPS a great idea for santa.
Otherwise, I look forward to learning a lot from ya'll - I was positively foaming at the mouth over some of the recipes yesterday....the side dishes looked especially amazing! Thanks for the knowledge so far, and I hope I can someday give something back.
