I found this forum while looking for a "Wild Turkey" sausage recipe, My wife & I live in Charlotte NC and I have dabbled in sausage making here & there for quite some time mainly with game meat with the exception of making some brats for a local brewery,s opening, Currently I am using a Brinkman smokemaster that a neighbor gave us when they moved
