I found your site a couple of weeks ago as I was looking for resources on bacon smoking. After a lot of reading in the forum area, I must say that I like the group that contributes here! I hope I can contribute some of my experiences as well! I love to learn about all things charcuterie. I am very good friends with a French master butcher and he has been gracious enough to pass along his knowledge of 65 years. But the French are a little head strong so I need to show this guy that I can do it too! So I'm filling my head full of knowledge!

I have a Bradley smoker that I use. As well, I've just picked up an Amazen Products sawdust smoker that I use with my Weber style charcoal grill as a smoke box when I want to change it up. In my opinion, both work well.

Anyway, I have some maple bacon just out of the cure and am rinsing at the moment. I will post it up when done and let you all know how it came out! I'm excited as a fat kid eatin' twinkies about this maple bacon!
