Hi all, just ran across this forum and sounded interesting so thought i'd check in. Originally learned about smoking in Texas about 15 yrs ago when I moved there for grad school, bought a New Braunfels vertical offset smoker a year or so later and have been making smokey goodness ever since.  Just made a pork butt this weekend that came out really nice and was scarfed down by my wife, 1 yr old and our neighbors. Looking forward to have a summer of smoked meat, and might enter my first BBQ competition later this summer. Look forward to hearing from everyone here and learning new things.

Seems I just read where someone here said that is you talk about smoking something but don't show pics that it didn't happen.

SO....to erase any doubt here's that butt I did this past weekend. This is after about 4 hours I believe. 
 
Welcome to the forum.  Worked in Calgary last year from july to nov. Beautiful place...at least till it got cold!   You should smoke one of them rabbits you have up there....big as dogs!  had a coyote run accorss Barlow Trail one monring going to the office!
 
Yes, I does get a bit chilly in Calgary, especially after living in Houston for 10 yrs. I should toss one of those giant jack rabbits on the smoker. Have one that is always eating our garden. The coyotes tend to eat the barn cats. :-( Never tried smoked coyote, but I suppose there is a first for everything. :-)
