Seems like what ever meat I do it gets kinda nasty around where the probe was in. I always try to get it in the thickest part of the meat but it seems when I'm cutting or pulling the meat the area around where the probe was is kinda tough and gray. Should I be inserting the probe with or against the grain? Should I put some oil or butter on the probe before I put it in?

I've never encountered that problem with a probe . I do make sure that I wash the probe and then wipe it with a disinfectant wipe before each use. I hope someone can be of more help to you. What brand of therm is that probe associated with?

I never encountered this problem either. Maybe try a different probe?

Its a Maverick, forget what model though. Maybe its just a coincidence and my probe has been in kind of a bad spot anyways.
