Hi. going to cook 4kg of bone in thighs.

will smoke for 30 mins @300f then cover in foil and cook for another 90 mins. Finishing temp will be 190f +.

If I leave them covered and put in a preheated cooler, can I hold safely for a couple of hours?

Use towels in the cooler and that will work out. Wouldn't try for more than a couple hours. Thighs need to stay above 140° to stay safe

Jake has ya covered ! Might even try pre- heating the cooler with hot water before hand.
