Well I was in the mood for chicken salad, so I spatchcocked 2 chickens, dry brined them for 24 hours, and smoked them. I let them rest them pulled them apart. I made some homemade Mayo and chipotle mayo. My wife put grapes, apples, pecans, and green onions with seasoning and the homemade Mayo. I made a softer type of French bead, toasted with some chipotle Mayo and I was licking my eyebrows lol. The best chicken salad I have ever had. Delicious with the added dimension of smoky goodness.
