OK, everyone this is my first post aside from roll call, so hopefully this works out alright. I found a small prime rib in the freezer that needed to get cooked, so here was my Saturday adventure. Started with making some roasted garlic, (which i didn't get a pic of) and making some slits in the roast to stuff with garlic. Next came the seasoning, which i kept pretty basic just some salt,pepper,garlic, and a little cayenne.
Next it went on the smoker for about 2 hours at around 230 degrees with some hickory. This pic was taken at around 100 IT.
So the wife and I love reverse seared steaks, and this got me to thinking why not on prime rib? I got the Weber gas grill fired up nice and hot and once the roast hit 130 IT on the smoker transferred it to the gas grill. This unfortunately got cut a little short due to my grease catch pan caught on fire! LOL
Covered with foil and let it rest for about 30 minutes.
I also made some roasted bone marrow. I put some olive oil, minced garlic, rosemary, and fresh parsley in a bowl and mixed it together good then brushed the bones and put them in the oven for about 20 minutes @ 400 degrees.
The wife made some homemade macaroni and cheese as a side! I know not the first thing that comes to mind when you think prime rib, but i wasn't going to complain.
Overall it came out very good. I was trying to get a nice little char by reverse searing and it didn't show up good in the pics but some pieces had it and it was very good. Next time I think I will pull it off the smoker a few degrees earlier and make sure the catch pan on the gas grill is clean. lol
