The CG w/ SFB is a good starter smoker...makes you really appreciate anything you upgrade to down the road!!!
My first actual smoker was just like yours, before that I had a big charcoal grill with a separation plate. I put the fire on one side and the meat on the other.
The best thermometer I have is a Maverick ET-732. It has dual probes, one for your pit and one for the meat. If you do multiple meats at the same time like I do, then supplement your collection with a nice cheapo from Lowe's or Home Depot.
