Help with Pizza on Big Green Egg?

Sorry if this seems redundant-couldn't find exact answer on a Search. Set up for pizza on Big Green Egg as follows: fire, then grate, then steel with pizza. Temp was 650 when pizza was placed on steel. First pizza caught fire when touched steel and crust charred. Second pizza, temp about 600, no flame but crust again ruined. Recommendations? Use BGE ConvEGGtor? If so, what is the max temp for the ConvEGGtor? Keep temp below 600 when using the steel? Place grate in the uppermost position? Others? Thanks much.

Can’t speak for egg but on my RT Bullseye pellet grill I go 400 directly on the grate and get great result. Typically a thin crust
