So I have a masterbuilt electric smoker. I'm smoking some chicken quarters, and everything was going great. I have about 8 of them in the smoker as we have guests coming over, but my temp in the chicken got to 160 WAY QUICKER then i was anticipating. I was planning to smoke them to 175 but had to pull them off. Now I have them wrapped in foil and I'm not sure how to finish them? I see two options?

1. Throw them back on the smoker and let the temp raise back up to 175...just worried I'll overcook it at this point because the temp will probably go down some til I get them back on in an hour or so.

2. Just get them to 175 on the grill at a higher heat once the guests arrive?

Thoughts please?
 
Since you already pulled them toss them onto your grill - high heat. You'll want to crisp up the skin.

What temp do i shoot for back on the grill? And would you go skin side down or up?
 
+1 on the grill. The skin will be much better. I have a MES-30 and it just can't get hot enough to finish the skin. Chewy and disappointing. Grilling in the way to go.
 
I like the grill idea also. High heat, crisp up the skin. Leg quarters can go to 180+ without overcooking.
