Second cook using my new Stump's Smoker and I was cooking 2, 12 to 13 pound beef briskets.  My old smoker typically took 16 to 18 hours, the stump did it in 12 hours.  I have 20 peoploe showing up tonight a 6, will the the briskets keep 6 hours + in wrapped in a couple of towels in a cooler or should I put them back on the smoker a some point?

Double wrapped in aluminum foil, wrapped in towels and your cooler in a warm area the briskets should still be steaming hot. you can run a cabled temp probe if you have one in the meat to monitor temps and if you feel the are getting too cool place them in a warm oven or a smoker.

+1

Dont forget to preheat your oven in case you need it, I know my oven has a mind of it's own, if I set it to 170 (its lowest setting) it will cycle up to 250 or so.
