I've been smoking for a couple of years now and have 4 drum smokers. Did my first comp this past July in Wildwood, NJ and didn't come in dead a** last haha. Was very happy about that. I'm also new to the vending scene and am doing my first farmers market this summer (selling only ribs right now). It's going very well....so well I need more smoking capability. Over the winter I'm looking to build (with a TON of help from some buddies) a 500 gallon propane tank smoker. Any tips, suggestions, layouts, etc you guys (and gals) could share...especially those which would maximize the cooking area....would be much appreciated. Thanks.....Dan
