Hey guys my lurking days are through! I'm Pete and I am determined to become a smoke master. Lol. I'm a rookie but it's so addicting that I don't really see any other option. Currently just have my MES30 and a weber grill. Haven't smoked anything on the kettle grill and am probably going to get a wsm sometime in the next year or two.
Screwed up ribs twice so far (they were terrible quality to begin with which didn't help) but have a good idea of what went wrong and will post the next run on here. Haven't messed up a pork butt yet and and just been experimenting with rubs. Going to try injecting one this weekend an see how that works out compared to brining. Last one was rubbed with just red chili powder (if you've been to abq you know it's kind of a big deal) and brown sugar but it was fantastic. Haven't made any finishing sauces yet but thats on the list too. Anyways, glad to be here and I'll start posting my own pics instead of just drooling over all of yours!
