Hello from a Michigander now in Oklahoma.

I am 53 years old. I am a pretty good cook when it comes to meat. I am adept at oven roasting, grilling, iron pan frying and sous vide.

I have never smoked before but have wanted to for a long time. After much research I just bought a gen1 masterbuilt 40"  20070311. Along with it I got the A-MAZE-N Pellet Smoker, a 1 pound bag of WESTERN 28067 Maple BBQ Smoking Chips and Smoker Pellets Quality Mix 20lb Cooking Pellets Perfect Mix Smoking Pellets BBQ. All should be here in 3 days.

I plan to add a cold smoker to this box in the future.

I hope to be able to make awesome brisket, bacon and North Carolina pulled pork. But in my 50's the wife wants me to make more chicken and turkey.

I am pretty hype about getting this.
