Monday’s are becoming my days to cook my lunch for the week. And since I’m just working from home it gives me more time to fire up the cookers. Today- chicken on the PBC.
Pretty straightforward. I had no chicken broth but I did have bouillon cubes so I dissolved 1/3 of a cube in about a cup of hot water. Let that cool and injected all over. Then I rubbed the bird down with McCormicks Montreal Chicken Seasoning and onto the PBC it went to hang out. Over B&B lump with some applewood for smoke. After the chicken was pulled I tossed on jalapeños and cauliflower for some sides.
And the final product was juicy and delicious. Can’t beat that for a simple lunch...
