Monroe County KY is two counties over. I've read a few articles on their regional specialty grilled/smoked pork steak with spicy hot vinegar-based moppings and dips. But I've not attempted to make them myself. I have a nice vinegar dip/mop at the ready, but the cooking method I've read about seems a little vague, if not secretive. I remember reading it takes maybe 45 minutes to cook. These steaks were cut "as thin as we can cut them" at about 1/2 inch thick. Sure hope it's thin enough for the Monroe County approach but if not son and I will have to adapt.
Thoughts sure appreciated if folks here have some experience with this BBQ cut and method.

My buddy who’s the local pig farmer round here loves pork steaks. He swears by the hot and fast method with them. Grill or skillet.
