Aka Maryland.
Obviously a new guy here but with a fantastic wife that gave me a smoke vault 18 for Christmas. I took care of seasoning it going from some recommendations I read on here and I plan on popping my smoking cherry with a rib roast. I have learned a lot just from lurking and these results photos give me the meat sweats.
I’m slapping a set of casters on the box today and picking up some different wood. I currently have mesquite only and I did read that I should mix in some fruit wood to tone down the taste of any hardwood I use.
Only time will tell.

Welcome from Iowa! And congrats on your new smoker! Glad you joined us

Welcome from Ma. try to get some pics of your first smoke, & take notes as to what you did.

Welcome from Ohio. For my tastes mesquite is very aggressive flavor profile. I use it sparingly as an accent to other woods.

Welcome from Mississippi. We like food porn. So brush up on your pic taking.
Jim
I definitely do the food porn but it is usually stuffed ham pics. It’s a regional dish here that first came around in the 1600’s. My family recipe is over 100 years old, oh and oysters definitely ready to smoke some oysters on the half shell.

Welcome! Yes, we need pics.
Consider getting a $1 bound composition book and keeping a journal of what you cook and how you did it.

Welcome from Ga. You'll find this is the best place to be. We live in New Carrollton and Gaithersburg for 2 years in the early 80's. It was when they first opened the Sea Port I think. Congrats on your new Toy.
Happy New Year!

Can't remember the name of the place they were right of the belt way at New Carrollton and was a seafood place. The menu was on a piece of wood and depending on where you chose you could order anything below but not above where you placed your order. Snow crab legs was on top and you could eat all you wanted for the one price.

I vaguely remember a Seafood chain there, similar to your description, but not the name. Fresh stuff too. Now I gotta find out. LOL.
