This is a popualr dish here just had a bowl for lunch at our local casino.

I never made it but if I did I would start with about 3 quarts water, 2 pounds pork cubes with some fat, like from a butt, and simmer until almost fork tender. Add 1 pound potatoes cubed, some canned whole tomatoes diced onions, and of course some roasted green chili's and simmer until the potatoes were done. Of course you could use some smoked pork or even pulled pork.

Since I have never made this, don't hold me accountable for the recipe. But I think it would be good, just use your imagination.

I make it all the time in the winter. I find cutting up the fresh roasted green chili and simmering it for several hours on low works well before adding meat, taters ect.

added to the green chili while simmering garlic pepper and salt I use beef stock are broth. seem to make the pepprs taste gooder for some reason.
