I have a Master Forge vertical charcoal smoker.  I have been smoking less than a year and am still learning.  When I first started smoking I got my coals hot and then threw some dried wood chips on them.  The result was the entire smoker caught on fire.  Since then I have been soaking the wood chips and rolling them in foil with holes poked in it.  I haven't had any problems with that method.  However, they just don't produce the smoke and flavor I am hoping for.

So my request for advice is this.  I want my meat to have a better smokey flavor than charcoal and the soaked wood chips are providing.  Should I use chunks instead of chips?  How much wood to use so I don't set me smoker on fire again?  Should I soak the chunks or not?  Feel free to give any advice you feel would help.

Buy chunked wood, not chips. If you go to Lowes or HD you can buy a bag of wood chunks for $10 or $12, then partially bury a couple of chunks in your unlit charcoal and use the minion method.
