I got a Boston butt out of the freezer to start thawing it for smoking it on Wednesday? Problem is on Dec 24 it will have been frozen for 1 year. I did not realize it was the old, would you use it? It has been doubled wrapped in butcher paper!
 
A year in waxed butcher paper , no vac pack is a long time in the freezer . Especially for pork .
Old pork fat is not a good thing , and you might not be able to tell at first , but once out of the paper the clock starts ticking .

I'm talking old pork fat , not bad . The taste will be off .
I've used them 2 1/2 years out of the freezer , but they were vac packed .
 
Get it thawed. Then look the surface over real good. Trim anything odd or pale or opaque. Trim the fat surface by half thickness. It will then cook up and eat like new.
