Does jurky that has been cured and smoked need to go into the fridge after being done?

No it doesn't have to if its dried enough. but if you have a ton of it, it will last longer in the frig.

Vacuum it and freeze. Works great.

If properly done, it should have virtually nil moisture content. Ryteks book recommends storing it in a plastic or glass jar with holes poked in the top. Kinda like we used to keep hoppers in for fishbait when I was a kid. My experience has been that if you refrigerate it, condensation moisture can form and then mold. Either freeze then eat it up or store in a baggy in the pantry. Vacuum sealing works the best if you have that capability.
