foods that don't hold up well in the freezer

Absolutely. I do it all the time. They come in packs of 3 racks from Costco so I vac seal them individually because it's just the two of us. After smoking, they can certainly be vac sealed for later use. We typically make tacos out of the leftovers within a couple days though so those don't get frozen, but you can do it without issue.

Thank you.

Smoked a rack Saturday and couldn't wait for them to finish so I could go to sleep.

Ends up I got the Vid and have had no appetite since.

I shall stick them in the freezer now.

Sometimes I like to take a frozen strip steak and put it in the toaster. Crank the heat up. It might take a couple rounds but man oh man the sear marks you get on that thing. Doesn't get much better.

Ha ha I had to laugh at this one John. I use to do the same with chicken and fish patties until the wife caught me and put an end to that.

i freeze ribs all the time with 0 change in taste or texture ...strange huh ?

We freeze all kinds of meals, always busy working for a living so not always time to make meals. They are quick to heat up and quite often taste as good if not better than they did fresh out of the oven. But we also vac seal everything or use freezer friendly containers. Ziplock bags with freezer burnt food is not good! What I really don't like is when people put a roll of toilet paper on the wrong way...isn't there some form of etiquette for that? We all know what I mean...it only rolls off naturally in one direction! The one other thing I hate is people wasting my time...I once sat and watched a 15 minute video of a guy on you tube growing potatoes in a 3 or 4 foot square wooden box...or so I thought. Anyway watched this guy disassemble his box, board by board and dig out dirt...in the end, he grew 1 potato. I'll never get those 15 minutes back...gone forever! Guess he showed me the way not to grow potatoes!

Gotta agree---TP has to come from over the top!!!
And maybe I'm not delicate enough, because I have never noticed any loss of quality of anything I ever put in my Freezers, for up to about 4 years in time. However I do Vac Seal everything that goes into my Freezers.

Great

Now I have to have a vacuum sealer......🙄

😬

You won't regret getting a vacuum sealer they are very handy. We shop meat sales and often times on sale stuff comes in family packs and there's just 2 of us so we divide the meat into meal size packages and vacuum seal the raw meat. Even if what's on sale isn't in a family pack we stock up so the vacuum sealer gets a workout at times.

Crazy woman there's no such thing as too much meat in the freezer just cases of not enough freezer space. Don't you dare tell her I said that I don't like knots on my head :emoji_laughing:

She also said she was gonna revoke my online auction privileges... but I did score a cookshack smoker for $60 and also two warming pans. And a new to us diesel pickup that is almost a twin to the one we have less 80,000 miles. So yes...freezers still have room! :emoji_blush:

Well I haven't had my privileges revoked yet I did recently score another high tunnel and a walk in cooler that I actually have to go take down and remove pretty soon. I was interested in some other stuff but people were bidding stuff way too high for me

I am like some above. I freeze Pulled pork and brisket both, but use a vacuum sealer. I have not had a different tasting one that I can recall. Although try to use them up within a month or two.
Side note: We have found that we enjoy reheating the meat up by simply putting the pulled pork in boiling water, then cutting it open when heated thoroughly. Maybe it's in our heads but does seem to retain more of the taste of fresh pulled pork flavor.
This is what we did for our big party. Reheating them in almost-boiling water in the vac-sealed bag I froze the meat in. I honestly didn't notice even a slight bit of difference from freshly pulled pork. Then again, the oldest of it was only in the freezer for 2 1/2 months. Longer may have made a difference?

This forum has frequently convinced me to get a vac-sealer. But the wife is right...we really don't have room for any more appliances.

And I support the "minimize the surface area to volume ratio" approach when freezing to maximize later flavor. So I try to be realistic before pulling or slicing and if I'm going to be freezing some of it, I keep it in as big and spherical lump as I can. And I do my first wrap in Saran, to push out as much air as possible, then put the wrapped mass into a zip lock for strength before freezing.

With ribs, I have better luck freezing them before cooking than after. That could just be because the butcher vac-sealed them and I didn't. Or it could be cooking drives out some water and leaves pores/capillaries for smoke particles (yippee) or freezer odors (yuck) to penetrate, or at least replace the water.
