I've been smokin food now for about a month. I'm finding my pork butt, ribs, and salmon, while tasteing great right out of the smoker, taste even better after spending the nite in the refer. Are my taste buds malfunctioning due to age or does anyone else experience this same "Flavor Time Warp?" LOL

A lot of foods will flavor age if allowed to sit over night.  That's why you usually see fresh sausage being allowed to sit overnight after grinding & mixing before smoking. Besides everyone knows meatloaf is better the 2nd day (for the same reasons I would guess).

I know the Pimento Cheese I make is much better the 2nd day than right after I mix it up.  I always make it ahead for this reason.
 
I have found the same thing. The meat tastes smokier the day after. I suppose this is because you become desensitised sitting next to the smoker all day.
