I'm going to be firing up the smoker and I am using some wood chunks, I'm not sure if I should soak or not? Please advise? Don't want to assume anything. Or does it just come down to preference?
 
Thought it might come down to preferences. Also, thinking of running out to get some sausages for the smoker, any suggestions?
 
Doesn't hurt to soak, just doesn't help either. An unnecessary step that at best adds a bit of steam up front, but might make some people feel like they've done something.

As for sausages, pretty much any sausage is going to smoke well. Kielbasa, brats, chorizo. All comes down to what you like.
