Hello everyone,

I recently got a Masterbuilt. On the manual it says that it's Model 20070712. It looks like this, except with a stainless steel door:


My first question is about wood chips. Specifically, how much should I use? I'll be trying a pork butt as my first smoke (i've read they're the most forgiving so I thought it'd be good for a first timer). I bought 2lbs each of hickory, pecan, and apple. 

Next is the water pan. From what i've read, opinions vary on the use of water. Some use it, some don't. Just looking for some opinions on whether I should use, how much, and should I substitute some other liquid?

Really enjoy this forum and all the useful info you guys put out. Can't wait to try my first smoke!
 
Norm, morning and welcome to the forum...  Start with 1/4 cup of chips and add more every 1/2 hour or so....  too much smoke makes food taste bad.... Water trays are a personal option... some do, some don't...   Dave
 
Thanks for the info Dave. Wow, I would have never guessed to use such a small amount of chips, especially given the size of the chip box.
