First time smokin cheese

I decided to try out my new AMAZEN Pellet I purchased from Todd today. I am using one row of peach on my cheese in my Performer Weber grill. I did Cheddar Jack, Medium Cheddar, Monterey Jack, Colby, Wisconsin Colby, Chipotle Cheddar, Pepper Jack, and Jalapeno & Habanero Jack. Still have room on my bacon rack, so when there is about an hour or so left to go i plan in adding some BP string cheese.As i have said this is my first cheese smokeso any heads-up would be great. 
 
Don't forget to give the cheese time to mature after smkoing. My first time (not waiting) was like eating a hickory smoked ash tray. Second time after letting the cheese rest in vacumn sealed bags for 4 weeks was great!

With only two in the house?  I actually use my Weber kettle for cheese with Todd's AMNS.

Another bonus?  With the smoke and proper aging?  We have found we don't need to use premium grade cheese to get great flavor for our snacks!
