Hey guys thanks for all the input you give here, it helps a lot. Just wanted to share with you the very first batch of ribs coming out of my very first smoking experience.  they came out  really good, I used a rub used in the SMOKE book by Tim Byres and the Sauce came from Whicked Good Barbecue book.

It was all really delicious. Tender and very moist, I loved the agave syrup drizzled before wrapping them in foil.

Hi, me too!

I tried chicken pieces and liked the results except for the excessive salt! We're not great salt lovers.

I guess I'll forgo the brining in the future.

Going fishing next week for brown trout and salmon - can't wait to try those in my new toy!
