So I'm not going to go into a full story like I usually do, simply because I've got a ton of work to finish before the weekend and I want to try to take off early today to play golf...ha!
Anyway, this smoke was actually done before I moved to St. Pete a little after St. Pattie's day. I apologize for not posting earlier but wanted to share anyway. As always the grocery store was running a sale on Corned Beef so I decided "why not". I soaked the briskets for 48 hours in the fridge, rotating every 12 hours, as instructed by the posts on this site (thanks as always). The rub was the black pepper corn mixture from the package, mustard seeds, garlic powder, and salt.
If I'm not mistaken I smoked them to an internal temp of 165 with applewood chips at 225 degrees. They were then pulled and let them take a nap in the fridge till the next day (only after a few "samples"). Next day they were sliced as thin as possible (I need a slicer) and was given away to friends and family. Man it was good!!!!
