First time chicken smoke

So today I decided to branch out from my usual beef, pork and lamb and decided to try something new and smoke a couple of chickens. I think they came out alright...thought I would share the process with everyone...

My wife for the first time decided to get involved and wanted to rub the chickens so I let her take care of that part


I put them straight on the cooking grates because I only have a 34cu/in Smoke Hollow and I didn't think I would have enough room to even think about standing them up...



At the first chip change at the 1 hour point


Then there is the finish. 2 birds on the tray. I didn't foil them while they were in the smoker. I waited until I took them out and brought them inside with the hopes that it will slow down the cooling process and continue to cook for a few more degrees while still maintaining the moisture that they picked up from the spritzing and water pan and their own internal juices. I took them out when my thermometer read 185 or so...


If you ask me, those are a couple of good looking birds that I have there. However, I'll take any advice on how to better do chicken or poultry in general (I hope to do a turkey at some point) that might help. Thanks all. Happy smoking and I hope you enjoyed what I have done here.

I love my Smoke Hollow. I hear from others about how the thermometers are off a bit but from what I can tell, mine is dead on. If I get the chance to upgrade to another smoker size (Gots to ask the wife...

) I would stay loyal to Smoke Hollow. It's a great little smoker for a decent price and it has never given me a problem and I don't think it ever will.
 
Thanks for the info!  I am in research mode.  Using a Camp Chef Smoke Vault that I love now.  I like having my racks/trays being 21 x 14.  I can fit anything on that!  Have gotten spoiled!  LOL
