I started at 0445. The butt is 8.5lbs I'm using MES 30 and maverick 732 thermos. I used the naked rib rub and let the meat sit overnight in the fridge. I do have a pic and I will try to post it. My temps in the smoker is reading 250 and I can't seem to keep it down and the meat is reading 133 almost 3hrs in.
